Breakfast Egg Bites
I like food. Like….a lot. If you do, my blogs were made for you. I also enjoyed going to Starbucks and ordering their egg bites and then realized I could make them at home. I am always looking for ways to get more protein in and have ready-to-go breakfast, lunch, dinner, and snacks. I’m not going to write too much because honestly when you are here for a recipe, you don’t care too much about what someone says so below is the recipe:
Breakfast Egg Bites (You can also eat them at anytime)
1 pack of Uncured Hardwood Smoke Turkey Bacon
1 cup of white onions
1 cup of green and red peppers
1 cup of egg whites
6 eggs
Handful of frozen spinach
3 slices of pre-sliced mozzarella cheese
Seasonings- onion powder, garlic powder, paprika, salt, and pepper
Makes 48 minis | Proteins: 2.9 g | Carbs: .5 g | Fats: 1.2 g | These macros are approximated for 1 serving*
Preheat the oven for 350 degrees.
Cook the bacon then cut it up.
Sauté the onions and peppers.
Chop up the spinach prior to placing the spinach in the same pan for the last minute, they cook fast.
Mix the bacon, onions, peppers, egg whites, eggs, and spinach in a large bowl.
Season the mix.
Place the mixture in each muffin pan. I use the mini silicon muffin pan.
Shop the nonstick pan here
Fill each muffin cup but not to the top. Cut up the mozzarella cheese in bite size pieces and place in each filled cup. Place in the oven from 15 to 20 minutes depending on the desired firmness. Let it cool and enjoy!
